Chia Berry Parfait

INGREDIENTS based on 1 serving
1⁄2 cup (125ml) milk, reduced fat (or dairy-free alternative)
1⁄8 cup (15g) vanilla protein powder (or natural protein powder)
1⁄8 cup (15g) chia seeds
1⁄2 medium banana mashed
1 pitted medjool date roughly chopped
pinch of salt
For Layering
1⁄3 cup (60g) fresh or frozen blueberries
1 tbs toasted muesli or granola (or gluten free)
1⁄8 cup (15g) fresh raspberries
METHOD
Combine milk, protein powder, chia, banana, dates and salt in a bowl and set aside for at least 4 hours, or overnight, stirring once to evenly distribute the chia.
At the same time in a small saucepan, simmer blueberries with a dash of water over medium heat for at least 5 minutes to breakdown and thicken to a sauce consistency. Place in the fridge to cool.
When ready to serve, layer blueberry compote and chia mixture into a small jar or glass. Top with muesli and fresh berries to serve.
