Chicken Fajita Skewers with Tortillas

PREP 10 MIN COOK  8 MIN – 1 serving – multiply for additional people

 

INGREDIENTS

2 bamboo skewers pre-soaked

150g skinless chicken breast cubed

1⁄4 tsp smoked paprika or more to taste

1⁄8 tsp dried oregano or more to taste

1⁄8 lime juiced

salt & pepper, to taste

1⁄4 red capsicum deseeded & cut into pieces

1⁄4 red onion cut in quarters

2 small (25g ea) corn tortillas (or wheat) warmed

1⁄4 avocado thinly sliced lengthways

1 iceberg lettuce leaf finely shredded

2 sprigs of fresh coriander 

1⁄8 lime to serve

  

METHOD

Place the chicken breast in a bowl and add the paprika, oregano, lime juice, season with salt and pepper and mix to combine. Thread chicken onto bamboo skewers, alternating with the red capsicum and onion.

Heat a grill pan, BBQ or frypan over medium-high heat and cook skewers, turning, for 6-8 minutes until cooked through. Divide skewers between plates and serve with warm tortillas, avocado, lettuce, coriander and a squeeze of fresh lime juice.
