Simple Salmon with Herb Sauce

Who said weeknight dinners have to be boring? Simple Salmon – cook the rice while your salmon roasts, whip up the herb sauce, and voila, dinner is served in just 30 minutes. This serves 1 – just multiply for people
Ingredients
1⁄4 cup (50g) brown rice rinsed
1⁄2 cup (125ml) water
1⁄4 tsp salt
120g salmon fillets
salt & pepper, to taste
1⁄4 lemon cut in wedges
Herb Sauce
1⁄8 bunch of fresh continental parsley (150g bunch) finely chopped
1⁄2 garlic clove grated into a fine paste
1⁄4 lemon juiced
Salad
1 cup (30g) mixed salad leaves
25g cherry tomatoes halved
1⁄2 tsp balsamic vinegar
Method
Preheat oven to 200°C and line a baking tray with baking paper.
Place rice, water and salt in a saucepan and simmer, covered for 30 minutes. Remove from heat and stand for 5 minutes before fluffing with a fork.
Place salmon on tray, season well with salt and pepper and roast for 13-15 minutes or until salmon is cooked to your liking.
While salmon roasts, combine sauce ingredients in a small bowl and season to taste.
Toss salad ingredients together in a bowl.
Divide rice and salmon between plates. Drizzle sauce over salmon, serve with salad and a wedge of lemon.
