Power Plus Muesli Bars

INGREDIENTS based on 8 servings

1 cup (100g) natural untoasted muesli (or gluten free) 

1⁄2 cup (60g) natural protein powder 

1 tsp mixed spice 

1⁄2 cup (130g) unsweetened apple sauce 

1⁄2 cup (150g) crunchy natural peanut butter (or other nut butter) 

1⁄2 cup (150g) honey (rice malt syrup or maple syrup) 

1 tbs sunflower seeds (kernels) 

 

METHOD

Preheat oven to 180°C and line a 20cm square baking tin with baking paper.

Combine muesli, protein powder and spice together in a large bowl.

Warm apple sauce, peanut butter and honey in a small saucepan for a few minutes to combine.

Add wet ingredients to dry and mix well. 

Press mixture firmly into prepared tin. Scatter over sunflower seeds and gently press into the surface.

Bake for 15 minutes, until golden.  Set aside in tin to cool before cutting into 8 bars.
