Pesto, Egg & Avocado Breakfast Bagel

Whether it's weekday fuel on the go or a lazy weekend brunch, give the deli a miss and make this filling bagel breakfast at home in less than 10 minutes.

INGREDIENTS based on 1 serving

2 large eggs 

1 tbs milk, reduced fat (or dairy-free alternative) 

salt & pepper, to taste

1⁄2 plain bagel (or gluten free ) split in half

1 tsp basil pesto 

1⁄8 avocado thinly sliced

1⁄2 cup rocket 

1⁄4 lemon

METHOD

Preheat a non-stick frypan over medium heat.

Whisk together eggs and milk and season with salt and pepper.

Add eggs to pan and cook gently pushing eggs in from edge of pan until set to your liking.

Meanwhile, toast bagel and spread one half with pesto.

Top with egg, avocado, rocket, squeeze of lemon, salt and pepper and top with the other half of bagel to serve.
