Chickpea & Edamame Power Bowl

INGREDIENTS

1 tsp hulled tahini 

1 tsp lemon juice 

salt & pepper, to taste

1 head of baby cos lettuce chopped

100g cherry tomatoes halved

1⁄4 cup (35g) frozen podded edamame defrosted

1⁄2 tin of chickpeas (400g tin) drained & rinsed

1 tbs pumpkin seeds (pepitas) 

 

METHOD

Whisk tahini and lemon juice together in a bowl and season with salt and pepper. 

Add lettuce, tomatoes, edamame and chickpeas and toss well.

Transfer to a serving bowl and top with pumpkin seeds to serve.
