Artichoke, Pesto & Rocket Sandwich

INGREDIENTS based on 1 serving

1 tsp basil pesto 

1⁄4 cup (60g) cottage cheese 

2 thin slices (40g ea) wholegrain bread (or gluten free) 

1⁄2 cup rocket 

1⁄2 medium tomato sliced

2 artichoke hearts in brine drained & cut in half

salt & pepper, to taste

 

METHOD

Mix pesto and cheese in a small bowl until combined. 

Spread half the slices of bread with cheese mixture, layer rocket, tomato and artichoke and season with salt and pepper. Top with remaining slices of bread, cut in half and serve.
